Zucchini Boats

Ingredients

  • 2 zucchinis
  • 1 cup grated cheese/non-dairy cheese
  • ½ cup cherry tomatoes, sliced in half
  • Handful chives
  • 2 Tbs avocado oil
  • Sprinkle of sea salt
  • 1 tsp cayenne pepper
  • 1 Tbs whole wheat flour
  • 1 cup cow milk/plant-based milk

Directions

  • Wash the zucchinis and cut vertically in half.
  • Scoop out the insides.
  • Add the oil, salt, milk and cheese into a pot and cook until the consistency is like that of bechamel sauce.
  • Add the sauce inside the zucchinis.
  • Top with the halved cherry tomatoes and cayenne pepper.
  • Bake for 25-30 min or until the cheese is crispy and zucchini is soft.
  • Top with fresh chives and serve warm.
