Ingredients
- 2 zucchinis
- 1 cup grated cheese/non-dairy cheese
- ½ cup cherry tomatoes, sliced in half
- Handful chives
- 2 Tbs avocado oil
- Sprinkle of sea salt
- 1 tsp cayenne pepper
- 1 Tbs whole wheat flour
- 1 cup cow milk/plant-based milk
Directions
- Wash the zucchinis and cut vertically in half.
- Scoop out the insides.
- Add the oil, salt, milk and cheese into a pot and cook until the consistency is like that of bechamel sauce.
- Add the sauce inside the zucchinis.
- Top with the halved cherry tomatoes and cayenne pepper.
- Bake for 25-30 min or until the cheese is crispy and zucchini is soft.
- Top with fresh chives and serve warm.
