Vegetable Stew

Ingredients

  • 1 onion, chopped
  • 3 carrots
  • 1 zucchini
  • 1 eggplant
  • 1 cup okra
  • 2 potatoes
  • 1 sweet potato
  • Handful green beans
  • Handful parsley to decorate
  • 1 cup strained tomato puree
  • 1 Tbs sea salt
  • 1 tsp maple syrup
  • 1 Tbs avocado oil

Directions

  • Sautee the onions and carrots.
  • Chop the potatoes, zucchini, eggplant and stir them in.
  • Sautee for 5 minutes, stirring occasionally.
  • Add tomato puree, salt, maple syrup and enough water to cover.
  • Once the water is boiling add the okra and green beans.
  • Cover and cook on low heat until carrots are soft.
  • Transfer the mix into a baking pan, putting the green beans on top and bake at 350F for 20 min or until the top is slightly crispy.
  • Top with fresh parsley and enjoy.
