Ingredients
- 1 onion, chopped
- 3 carrots
- 1 zucchini
- 1 eggplant
- 1 cup okra
- 2 potatoes
- 1 sweet potato
- Handful green beans
- Handful parsley to decorate
- 1 cup strained tomato puree
- 1 Tbs sea salt
- 1 tsp maple syrup
- 1 Tbs avocado oil
Directions
- Sautee the onions and carrots.
- Chop the potatoes, zucchini, eggplant and stir them in.
- Sautee for 5 minutes, stirring occasionally.
- Add tomato puree, salt, maple syrup and enough water to cover.
- Once the water is boiling add the okra and green beans.
- Cover and cook on low heat until carrots are soft.
- Transfer the mix into a baking pan, putting the green beans on top and bake at 350F for 20 min or until the top is slightly crispy.
- Top with fresh parsley and enjoy.
