Roasted Eggplant

Ingredients

  • 1 large eggplant
  • 2 Tbs avocado oil
  • Sprinkle of sea salt

Directions

  • Wash the eggplant and cut vertically into half
  • Make diagonal slits on the inner sides to allow it to cook better inside.
  • Use a brush to spread the avocado oil around the eggplant halves.
  • Sprinkle sea salt on both sides.
  • Place them facing down on a parchment paper lined baking tray.
  • Bake at 350 F for 30 minutes
  • Turn the eggplants to face up and bake for another 30 minutes or until golden brown on top.
