Ingredients
- 1 large eggplant
- 2 Tbs avocado oil
- Sprinkle of sea salt
Directions
- Wash the eggplant and cut vertically into half
- Make diagonal slits on the inner sides to allow it to cook better inside.
- Use a brush to spread the avocado oil around the eggplant halves.
- Sprinkle sea salt on both sides.
- Place them facing down on a parchment paper lined baking tray.
- Bake at 350 F for 30 minutes
- Turn the eggplants to face up and bake for another 30 minutes or until golden brown on top.
