Quinoa Patties

Ingredients

  • 5 cups quinoa, cooked
  • 5 cups chickpeas boiled
  • 1 cup spinach
  • 5 small green onions, finely chopped
  • 1/3 cup gluten-free oats, ground into flour
  • 3 cloves garlic
  • 2 Tbsp avocado oil for cooking
  • ½ tsp paprika powder
  • Sea salt to taste

Directions

  • Soak chickpeas overnight, boil them (you can alternatively also used canned chickpeas).
  • In a food processor, blend it with garlic into a thick paste without adding any water.
  • In a pan, heat water, add the spinach leaves and cook for 3-4 minutes till the stems are soft.
  • Turn off the heat, drain the spinach and dump it in cold water and then finely chop the spinach.
  • In a bowl mix all ingredients – cooked quinoa, ground chickpeas paste, chopped spinach, finely chopped green onions, oat flour and salt. Mix them well.
  • The mixture should have a very thick consistency that can be easily shaped into balls.
  • Add a drop of oil in between your palms, take a little portion of the mixture roll them into circular balls gently pressing them on all sides to give it a structure of a patty (If the mixture is sticky, adjust the consistency by adding more chickpeas paste and oat flour).
  • Repeat the process of making patties for the entire mixture.
  • Heat very little avocado oil on medium high heat in a skillet.
  • Cook the patties for 8-10 minutes till one side is done and then flip it over to cook the other side for another 8-10 minutes till both the sides have turned crispy and golden brown.
  • If required add few more drops of oil.

Alternatively, you can bake the patties instead of frying them on skillet by preheating the oven to 360F, greasing a baking tray, and letting the patties bake for 15 minutes. After 15 minutes, flip the patties to the other side and let them bake for another 10 minutes till the sides have turned golden brown and crisp.
