Ingredients
- 1 cup oat flour (made home in a blender from rolled oats)
- ¼ cup rolled oats
- ½ cup coconut sugar
- 1 tsp cinnamon
- ½ tsp pumpkin spice
- 1/3 cup chopped pecans
- ½ tsp baking soda
- ½ tsp sea salt
- ½ cup pumpkin puree
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- 1/3 cup shredded unsweetened coconut
- 1/3 cup chocolate chips
- 1 egg
Directions
- Preheat the oven to 350F and line a baking tray with parchment paper.
- Mix dry ingredients in a bowl.
- Add the wet ingredients and mix well.
- Place one cookie scoop or 2 tablespoon balls of the batter on the baking trays and gently press them down.
- Bake for 12-15 minutes.
- Let cool for 3 minutes in the sheet pan and then transfer onto a wire rack.
