Pumpkin & Oat Chocolate Chip Cookies

Ingredients

  • 1 cup oat flour (made home in a blender from rolled oats)
  • ¼ cup rolled oats
  • ½ cup coconut sugar 
  • 1 tsp cinnamon 
  • ½ tsp pumpkin spice
  • 1/3 cup chopped pecans 
  • ½ tsp baking soda 
  • ½ tsp sea salt 
  • ½ cup pumpkin puree 
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/3 cup shredded unsweetened coconut 
  • 1/3 cup chocolate chips 
  • 1 egg

Directions

  • Preheat the oven to 350F and line a baking tray with parchment paper.
  • Mix dry ingredients in a bowl.
  • Add the wet ingredients and mix well.
  • Place one cookie scoop or 2 tablespoon balls of the batter on the baking trays and gently press them down.
  • Bake for 12-15 minutes.
  • Let cool for 3 minutes in the sheet pan and then transfer onto a wire rack.
