Ingredients
- 2 cups almond flour
- ½ tsp baking soda
- 1 tsp pumpkin spice
- 1tsp cinnamon
- Pinch of sea salt
- 3 eggs
- ¾ cup coconut sugar
- 1 can pumpkin puree
- 1 tsp vanilla extract
- 2 Tbs pumpkins seeds (optional)
Directions
- Mix the flour, baking soda, pumpkin spice, cinnamon, sea salt in one bowl.
- In a separate bowl, whisk the eggs, coconut sugar, pumpkin puree and vanilla extract in a separate bowl.
- Fold in the dry ingredients into wet ingredients.
- Spoon the batter into the muffin cups.
- Top with pumpkin seeds if desired.
- Bake for approximately 45-50 min or until golden brown (use the toothpick test to see if it’s cooked in the middle).
