Pumpkin Muffins

Ingredients

  • 2 cups almond flour
  • ½ tsp baking soda
  • 1 tsp pumpkin spice
  • 1tsp cinnamon
  • Pinch of sea salt
  • 3 eggs
  • ¾ cup coconut sugar
  • 1 can pumpkin puree
  • 1 tsp vanilla extract
  • 2 Tbs pumpkins seeds (optional)

Directions

  • Mix the flour, baking soda, pumpkin spice, cinnamon, sea salt in one bowl.
  • In a separate bowl, whisk the eggs, coconut sugar, pumpkin puree and vanilla extract in a separate bowl.
  • Fold in the dry ingredients into wet ingredients.
  • Spoon the batter into the muffin cups.
  • Top with pumpkin seeds if desired.
  • Bake for approximately 45-50 min or until golden brown (use the toothpick test to see if it’s cooked in the middle).
