Ingredients
- Ghee for greasing the muffin tin
- ½ cup rolled oats (not instant)
- ½ tsp sea salt
- ½ tsp baking soda
- 1 tsp cinnamon
- ¼ tsp ground cloves or nutmeg (optional)
- 2 medium apples, sliced
- 1 ¼ cups pitted dried plums (prunes)
- 4 large eggs
- 1 ¾ cup almond flour
Directions
- Preheat the oven to 350F.
- Grease 12-muffin tins or paper muffin cups with ghee.
- Put the oats, sea salt, baking soda, cinnamon and nutmeg if using, in the food processor and blend until an even textured flour is reached.
- Core the apples and cut them into slices leaving the skin on.
- Add the apples and dried plums to the food processor and pulse to blend into a smooth texture.
- Add in the eggs and pulse until combined.
- Add the almond flour and pulse a few more times.
- Spoon the batter into the muffin cups.
- Bake for approximately 30 min or until golden brown (use the toothpick test to see if it’s cooked in the middle).
