Red Lentil Soup

Ingredients

  • 1 onion, sliced into 4
  • 3 carrots, peeled and sliced into 4
  • 2 small potatoes, peeled and sliced into 4.
  • 1 ½ cup red lentils, washed and strained
  • 1 Tbs salt
  • ½ cup chicken broth
  • 1 Tbs avocado oil
  • ½ lemon
  • Sprinkle of cayenne pepper
  • Sprinkle of black pepper
  • Handful of chopped parsley

Directions

  • Add the avocado oil to the pot.
  • Sautee the onion and carrots for a few minutes.
  • Add in the potatoes and lentils.
  • Add the chicken broth and enough water to cover.
  • Add the salt and cook on low heat until all vegetables are soft, for about 30 minutes.
  • Let it cool and use an immersion blender to puree the ingredients.
  • Once served into bowls, add a few squeezes of lemon juice, black pepper, cayenne pepper and top with fresh chopped parsley.
