Red Lentil Soup
Ingredients
- 1 onion, sliced into 4
- 3 carrots, peeled and sliced into 4
- 2 small potatoes, peeled and sliced into 4.
- 1 ½ cup red lentils, washed and strained
- 1 Tbs salt
- ½ cup chicken broth
- 1 Tbs avocado oil
- ½ lemon
- Sprinkle of cayenne pepper
- Sprinkle of black pepper
- Handful of chopped parsley
Directions
- Add the avocado oil to the pot.
- Sautee the onion and carrots for a few minutes.
- Add in the potatoes and lentils.
- Add the chicken broth and enough water to cover.
- Add the salt and cook on low heat until all vegetables are soft, for about 30 minutes.
- Let it cool and use an immersion blender to puree the ingredients.
- Once served into bowls, add a few squeezes of lemon juice, black pepper, cayenne pepper and top with fresh chopped parsley.
