Ingredients
- 1 cup chopped kale
- 1 cup chopped red cabbage
- 3-4 basil leaves
- 6 asparagus spears, chopped
- ¼ red pepper, chopped
- ¼ yellow pepper, chopped
- 4-5 snap peas (optional)
- Microgreens (optional)
- Baked wild caught Salmon/protein of choice
- Handful of pumpkin seeds/sunflower seed/chopped almonds (optional)
- Juice of half a lemon
- 3 Tbs Extra Virgin Olive Oil
- Sprinkle of sea salt
Directions
- Combine all the ingredients in a bowl.
- Combine the juice of lemon, olive oil and salt in a bowl.
- Pour sauce over salad and enjoy!
