Rainbow Salad with Salmon

Ingredients

  • 1 cup chopped kale
  • 1 cup chopped red cabbage
  • 3-4 basil leaves
  • 6 asparagus spears, chopped
  • ¼ red pepper, chopped
  • ¼ yellow pepper, chopped
  • 4-5 snap peas (optional)
  • Microgreens (optional)
  • Baked wild caught Salmon/protein of choice
  • Handful of pumpkin seeds/sunflower seed/chopped almonds (optional)
  • Juice of half a lemon
  • 3 Tbs Extra Virgin Olive Oil
  • Sprinkle of sea salt

Directions

  • Combine all the ingredients in a bowl.
  • Combine the juice of lemon, olive oil and salt in a bowl.
  • Pour sauce over salad and enjoy!
