Orange Cake

Ingredients

  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • Juice of 1 orange
  • Zest of 1 orange
  • ½ cup coconut sugar
  • ¼ cup avocado oil
  • 1 tsp vanilla extract
  • 1 egg

Directions

  • Preheat oven to 350F.
  • Whisk the egg with the coconut sugar, orange juice, orange zest and vanilla extract, and avocado oil.
  • In a separate bowl, mix the flour and baking powder.
  • Slowly add the dry ingredients into the wet ingredients, adding a little at a time and mixing in slowly with a whisker.
  • Pour the batter into a baking tray and bake for about 20 minutes.
  • Test around 15 min with toothpick to see if it’s cooked in the middle.
