Green Shakshuka

Ingredients

  • 1 Tbs ghee
  • 2 large leeks, thinly sliced
  • 1 bunch kale, chopped
  • 1 clove garlic, minced
  • 4 eggs
  • ½ tsp sea salt

Directions

  • Preheat the oven to 350F
  • In a 10-inch ovenproof skillet, melt the ghee.
  • Add the leeks and cook until soft.
  • Stir in the kale and continue to cook for a few minutes.
  • Stir in the garlic, sea salt and cook for a few more minutes.
  • Crack each egg into the skillet.
  • Transfer the pan to the oven and bake for 10-12 minutes, until the eggs whites are cooked, and the yolks are at desired consistency.
  • Enjoy immediately.
