Ingredients
- 1 Tbs ghee
- 2 large leeks, thinly sliced
- 1 bunch kale, chopped
- 1 clove garlic, minced
- 4 eggs
- ½ tsp sea salt
Directions
- Preheat the oven to 350F
- In a 10-inch ovenproof skillet, melt the ghee.
- Add the leeks and cook until soft.
- Stir in the kale and continue to cook for a few minutes.
- Stir in the garlic, sea salt and cook for a few more minutes.
- Crack each egg into the skillet.
- Transfer the pan to the oven and bake for 10-12 minutes, until the eggs whites are cooked, and the yolks are at desired consistency.
- Enjoy immediately.
