Chicken Vegetable Soup

Ingredients

  • 1 onion
  • 3 carrots
  • 3 medium potatoes
  • 2 sweet potato
  • 2 medium zucchinis
  • Handful green beans
  • Handful kale
  • Handful parsley

 

  • 6 pieces of skinless chicken thighs
  • 1 Tbs avocado oil
  • 1 Tbs salt
  •  

 

Directions

  • Add the avocado oil to the pot.
  • Chop the onion and carrots and sauté them.
  • Chop the potatoes, sweet potatoes, zucchini, parsley, and kale.
  • Stir them in and let them cook for a couple of minutes.
  • Add enough water to cover.
  • Add the chicken.
  • Add the salt.
  • When the water comes to a boil, turn the heat to low and cook for about an hour or until the vegetables and chicken are soft.
