Ingredients
- 1 onion
- 3 carrots
- 3 medium potatoes
- 2 sweet potato
- 2 medium zucchinis
- Handful green beans
- Handful kale
- Handful parsley
- 6 pieces of skinless chicken thighs
- 1 Tbs avocado oil
- 1 Tbs salt
Directions
- Add the avocado oil to the pot.
- Chop the onion and carrots and sauté them.
- Chop the potatoes, sweet potatoes, zucchini, parsley, and kale.
- Stir them in and let them cook for a couple of minutes.
- Add enough water to cover.
- Add the chicken.
- Add the salt.
- When the water comes to a boil, turn the heat to low and cook for about an hour or until the vegetables and chicken are soft.
