Carrot Cake

Ingredients

  • ½ cup whole wheat flour
  • 1 cup grated carrots
  • 3 Tbs maple syrup
  • 3 eggs
  • 1 tsp baking powder
  • ¼ cup avocado oil
  • ½ cup chopped walnuts
  • 1 tsp cinnamon

Directions

  • Preheat oven to 350F.
  • Whisk the egg with maple syrup.
  • Add in the oil and grated carrots.
  • Add the flour, baking powder, cinnamon, walnuts and mix.
  • Pour the batter into a baking tray and bake for 20-25 minutes.
  • Test with toothpick to see if it’s cooked in the middle.
